Executive Chef Chad Weise has more than 17 years of restaurant experience. Originally from Texas, Chad developed an interest in food at a young age from watching his grandfather, who grew vegetables in his garden and brought the family together over his beloved seafood gumbo. Chad attended culinary school at the Art Institute of Houston. He worked in Houston for nearly a decade, including Smith & Wollensky, Eddie V’s, and Brennan’s of Houston. He has lived and worked in the DC area for the past 7 years, including The Occidental, Floriana, and City Tap House. He most recently worked as the Chef de Cuisine at The Occidental, where he worked with local farms and created seasonal menus. Prior to that, he was the Executive Chef at Floriana, where he grew to love the art of homemade pasta. Chef Chad plans on continuing his journey from The Occidental and Floriana to the new Delia's Mediterranean Grill by putting his focus on seasonal, high quality Greek and Italian cuisine.
